BBQ CHICKEN DIP

Ok y'all. If you didn't already know- I am originally a southern girl. Yep. I grew up in Georgia. As kids we used to walk down to the gas station from our house that used to sell 50 cent BBQ sandwiches. I was obsessed with these beautiful little sandwiches. So  GOOD. 
So as you can see, I love BBQ related anything. I am big on making my own BBQ sauce cause I don't love everyone's BBQ sauce- believe me, they can truly vary in flavor. Some of them are just way too sweet for me. So I like making my own, so I can control the flavors. 

I know buffalo dip was all the rage there for a moment so I thought I'd try and make a BBQ dip for all the people out there who are like me, that love BBQ sauce ;)

The toppings on this dip are important to me, because it really balances everything out.
Red onions always are necessary when it comes to BBQ chicken pizza, so I didn't leave them out of this. Pickles are key also for me, cause ya can't have BBQ without a dang pickle! Ya feel me? And jalapenos because come on now- do you know me? Ha! Ya girl loves a spicy situation. I just do. SO yeah. They went on here as well. And like spicy, my love for ranch runs real deep. So yeah. A drizzle of ranch on top. Ranch and BBQ sauce are best friends. Trust me. The flavors work so well together cause they balance each other out. 

Sweet, smoky, savory and with a little kick.

BBQ CHICKEN DIP
Recipe by The Daily Kale, aka Krysten Jorgensen
Serves 1, double up if you're sharing ;)

Ingredients:
  • 1/3 cup BBQ sauce
  • 2 Tbsp. whipped cream cheese
  • 1 cup Chicken, shredded/seasoned 
  • 1/4 cup Cheddar 
  • 1/4 cup Monterey Jack

Toppings: 
  • Jalapeño 
  • Pickles
  • Red onions
  • Scallions
  • Ranch
  • Extra cheese
  • Extra BBQ sauce 

Directions:
  1. Preheat oven to 425.
  2. In a bowl mix together your BBQ sauce, whipped cream cheese, shredded chicken and cheeses. 
  3. Place the mixture in an oven safe dish.
  4. Add your toppings evenly on top.
  5. Bake for 10-12 minutes or until cheese has melted.
  6. Serve with corn tortilla chips or your favorite dip chip! *I made homemade tortilla chips for these in my air fryer, and it was so good! 




️BBQ sauce:  
  • 1 cup ketchup
  • 3 tbsp. apple cider vinegar 
  • 1.5 tbsp. Worcestershire sauce  
  • 7 tbsp. coconut sugar or golden monk fruit 
  • 2 Tbsp. yellow mustard
  • 1/2 tbsp. garlic powder 
  • 1/2 Tbsp. paprika 
  • 1/2 tsp onion powder 
  • 1/2 tsp ground black pepper, or to taste 
  • Pinch of chipotle and chili powder (optional)
  • 1 cup water   


Directions:
  1. Add all of your ingredients to a small pot.
  2. Stir together on low heat. Use a whisk to make sure it is well combined.
  3. Simmer for about 10 minutes or until slightly thickened.

NOTES:
  • You can use your favorite store-bought BBQ sauce for this instead
  • Skip adding the ranch if you're not a fan, but if you are, give it a try.
  • Use your favorite chips to serve with this

Chicken Bacon Ranch Jalapeno Poppers

Chicken Bacon Ranch Jalapeño Poppers:
Recipe by: Krysten Jorgensen @TheDailyKale

  • 5 jalapeños (cut in half/seeded)
  • 3-4 tbsp. cream cheese 
  • 1-2 tsp ranch seasoning 
  • 1 cup chicken, chopped cooked
  • 1/2 cup shredded mozzarella *
  • Heavy pinch of garlic powder, paprika, salt and pepper
  • 10 pieces of Bacon  


  1. Add everything to a bowl and mix.
  2. Spread mixture evenly into jalapeño halves.
  3. Add more cheese if you’d like .
  4. Wrap with bacon.
  5. Air fry at 380 for 7-10 minutes or until bacon is fully cooked,

*Reminder that everyone’s air fryer is different. *Makes 10.

Gochujang Chicken Crispy Rice

Gochujang Chicken Crispy Rice ✨Back with another crispy rice recipe that you gotta try 😍especially for those of you who don’t love seafood, this is using chicken instead and it’s SO good! 


Perfect NYE app or game day snack or you can make this as a really nice appetizer for your Valentine’s Day Dinner or to share at a Galentine’s party. Or for anytime honestly 😉 


*If you prefer seafood you can definitely swap salmon for the chicken. Either way I just hope y’all give this a try and enjoy it as much as we did! 


◽️Gochujang Chicken topping:
  • 1 cup Chicken, chopped/cooked
  • 3 tbsp Gochujang sauce 
  • 2 tbsp Cream cheese 
  • 1 Scallion, chopped
  • Sesame seeds


  • Mix together the above ingredients in a bowl until combined. I used whipped cream cheese but you can use regular (softened) if you prefer.


▫️Crispy rice:
1 cup Sushi Rice (dry)
1 tbsp Rice vinegar
1.5 tsp Sugar or monkfruit 
Pinch of salt 


  • Cook rice according to your sushi rice package. Once cooked mix in sugar and rice vinegar and stir. Place in a shallow rectangle baking pan w/ plastic wrap to form, place in the fridge for at least 2 hours right overnight. Then carefully cut into squares and shallow fry in some high heat oil. Once done, set aside on a paper towel.


*Filling makes enough for about six crispy rice, depending on the amount you put on each one. Assemble your crispy rice by topping it with the chicken mixture and I added a drizzle of eel sauce on top, sesame seeds and jalapeño. Enjoy! ✨

Chicken Teriyaki Crispy Rice

​Teriyaki Chicken Crispy Rice ✨ Sharing another appetizer idea for this weekend 🥰 It’s such a good one, especially if you’re not a seafood lover and always wanted to try crispy rice. It’s a great appetizer to share with friends, or for a fun little date night in the kitchen. Or just for yourself, whichever! ☺️Either way I hope y’all enjoy! 


◽️Teriyaki Chicken Topping:
  • 1 cup Chicken, chopped/cooked
  • 1/2 cup + 2 tbsp Teriyaki sauce 
  • 4 tbsp Cream cheese
  • 2 Scallion, chopped
  • 2 tbsp Spicy Mayo


  • In a pan mix chicken with about 5 tbsp of the teriyaki sauce (save the other 4-5 tbsp for mixing in bowl) until coated on low heat- until mostly absorbed. Once cooled, add to a bowl with other ingredients and mix until combined. 


▫️Crispy rice:
1 cup Sushi Rice (dry)
1 tbsp Rice vinegar
1.5 tsp Sugar or monkfruit 
Pinch of salt 


  • Cook rice according to your sushi rice package. Once cooked mix in sugar and rice vinegar and stir. Place in a shallow rectangle baking pan w/ plastic wrap to form, place in the fridge overnight. Then carefully cut into squares and shallow fry in some high heat oil. Flipping 


  • Place the chicken mixture on top of each crispy rice evenly and add a little bit more teriyaki sauce, spicy mayo and a jalapeño slice on top. I hope y’all enjoy!
  • The amount this makes really depends on the size of the pan you use for crispy rice. The one I used made 24 pieces of crispy rice.

Crab Rangoon Crispy Rice

Crab Rangoon meets Crispy Rice 🤌✨ If you’re like me and you love crispy rice and also crab rangoon, then ya gotta give this a try! *so* so good. Instead of the usual crispy wonton outside, I used crispy rice as the base 😍 Also! if you missed my other crispy rice recipe from last week, definitely check that one out too! I hope y’all enjoy ✨ 


Crab topping:
5-6 oz cream cheese (room temp)
4 imitation crab sticks (chopped)
1 tsp worcestershire
1/2 tsp soy sauce 
1/2 tsp sesame oil
1/4 tsp garlic powder 
1 tsp sugar of choice
2 tbsp green onions (chopped)


-Stir everything together and then place 1-2 tbsp on top of each crispy rice. Drizzle with some sweet and sour sauce, garnish with a jalapeño slice.


▫️Crispy rice:
