Honestly, the only nickname my family had for me was “Eva Teeny Weeny” which is pretty embarrassing I guess and not sure why I’d share that haha. And in case you’re wondering, I’m still a small person.

But where are you really from?
The Midwest! I was born in Massachusetts, but we moved to central Illinois when I was young so I grew up there.
Who or What inspired you to begin your healthy lifestyle/ or have you always been healthy?
I wouldn’t really consider myself to have a particularly healthy lifestyle. I mean I do try to generally eat well and stay active, but I’m not too fussed about it.
What are your favorite places to eat?
I like eating at restaurants that specialize in international cuisines (Mexican, Ethiopian, Malaysian, Korean, you name it) and obviously love eating at vegan restaurants!
Drink of choice?
If we’re talking non-alcoholic beverages then it’s definitely tea, either black tea or matcha.
Foods you eat on a daily basis? (ie. Breakfast/Lunch/DInner):
I bake sourdough bread and have it for breakfast basically every day. Usually with homemade chipotle cultured cashew cream cheese, sometimes with vegan butter, and occasionally I make avocado toast.
Potato chips. They’re my guilty pleasure! I don’t feel that guilty about it though.
Shy or outgoing?
Outgoing! Though I’m shy when it comes to interactions not in person.
What is your favorite season?
I want to say summer, but now that I live in DC and summers are miserably hot and humid I think I prefer fall or spring. It’s TBD which will be my favorite!
Favorite vegetable ?
Cauliflower? Maybe? I hate picking favorites!
Favorite place to visit?
What has been your best vacation to date?
My honeymoon! We spent a month road tripping across South Africa and Namibia and it was incredible. We traveled over 4,000 miles and saw so many things!
Favorite recipe you make?
Too hard to pick one!
Sweet or Savory? Savory. When I try to have sweet things I have to eat something salty after!
What do you like to do for exercise?
These days I’m doing yoga, but more out of convenience than anything else.
Night Owl or Early Bird?
Early bird, but not crazy early or anything.
Any advice you’d like to give someone who thinks it’s hard or expensive to eat healthy?
Eat more beans and lentils! Shop seasonal produce as much as possible, as it’s usually cheaper. Be flexible with menu planning, there are always some fruits and vegetables on sale at the grocery store!
Who or what motivates you?
I’d like to think I’m self motivated and super independent, and while that’s true, I’m pretty sure I wouldn’t try anywhere near as hard if it weren’t for my husband Omar!
Any natural remedies you swear by?
Stay hydrated (I’m really bad at this one).
What’s one of your favorite things about life?
Eating. And adventuring. Sometimes those are the same thing.
