Love? Yes Good ole' fashion love. I'm thankful for it. The love we have for people. For our passions. That full on strong feeling, you really can't explain, besides what it is- love. I have lots of love in my life. As we all should. Life is no good without it. This past week was pretty amazing, as I turn to take a look back at all that happened. I spent time with my brother, his wife, my nephew in San Diego. Had an early thanksgiving lunch with them. It was great to spend time with my nephew and see all of them. It's been way too long. As well as on actual thanksgiving, spending time with all of my boyfriends family. He is so lucky to have basically, all of his relatives, living so nearby. Everyone brings food, and they spend time together outside, eating and just talking about old stories, etc. It's beautiful. And then the next night, going out of town a little, to visit with my cousin and her husband. It was nice to relax with wine and snacks.... while laughing at her hilarious husband, and playing with her very soft, sweet puppy. Ahhh family time. Nothing compares. Then also on Saturday, my boyfriends big 30!!!!! Yep. It was pretty awesome. I took him to a roof top lounge in Venice, for a drink :) It was beautiful. Then we went to the Grove for his favorite restaurant, The Cheesecake Factory. Then afterwards, a surprise for him. I took him to a bar where some his friends were at, that he didn't know would be there :) To play pool and other games... to finish the night. Making him happy- makes me very happy :) His main birthday present- was a trip to NYC which will be happening in a week! Can't wait! Plus I get to see my sister! Yay! I miss my mom terribly. June, will be when I visit her. And I always look forward to that time. I hope you all have had a great time with family and friends, and enjoying tasty healthy food. My next post is how if you may have over did it, a way to get back on track ;) Cherish the moments with your loved ones!
So it has been AWHILE! Yeah! I get it. I'm sorry :/ I've lost my focus a bit on this side of things- and have been dedicating myself fully to my other loves in life. I have yet to find balance there, with doing both. I think it's either I'm doing one or the other strongly at times, and back and forth. But right now I wanted to reach out with what is going on my life! One big thing- I think we all go through, is a rut. Or that icky stuck feeling. And kind of lost- not sure where to step next, type deal. Yes, yes. It happens. But what I've come to discover, is just be what is- whatever your feeling, feel it. It's ok to have feelings, but that isn't who you are. It's just currently your state. But guess what, I've got news for you! You can change that! Oh yes. With the quickness. We all feel sad, mad, happy, etc.... whatever it is, embrace it. Truly. Take it in....Mhmmm. Ahhhh. Now let it go- and on to the next one. You have life here, right in front of you. What are you waiting for. Jump in!
We only have right now. On that note. I've been in a slump. I'm not gonna lie to ya'll! I'm going to be completely honest. Times are hard sometimes, whether financially, or just personally, in other aspects. For me right now, I'm just starting a new journey. Fully in it's entirety. I don't know about you, but I am sick of starting projects and not finishing them! Ugh! Not ok! All these things, sitting around, undone, that I started sometime long ago. Even in my mind. These things that sound like great ideas, but mehh, another time. I can do that tomorrow. No, no, no, you can't cause you know what, we ONLY have right now! Finish the unfinished! Do it! Right now. Yes- it is that easy. Just go ahead and start, you won't believe how far you'll go. Now depending on how old you are. You either get the title of this- or you don't. So I'll inform you -either way. Patty Mayonnaise is a girl from the show "Doug" that I used to watch all the time when I was younger. I like her name. Never understood it- but liked it. And weirdly enough there for a little bit in elementary school I had a friend who nick named me "Mayo" and I named her "Mustard". Yeah that didn't stick. But it's funny I remember. Haha. Anyway. on to mayonnaise. I've for the most part always liked mayo. Especially- on my hamburgers. So now a days. Since there are no ham in my burgers anymore. "Mayo" is a must at any of the vegan eateries I go to. And I always wondered how it was made. I gave my cashew cheeze a break- and attempted to make this. Based off a recipe I found in my Forks Over Knives cook book. I never thought it could work :/ Seriously, tofu? In a sauce :/ But no joke. This stuff tastes like MAYO. NOT playing. Like for real. Especially when you first make it the plain way- it's seriously tastes/smells like mayo. Crazy talk. But try it. If you want. Not trying to push it at you. Ha. Alright here are 3 different variations. Put it on whatever you'd like! I used what I had in the kitchen- so you can get creative with whatever you have ;) I made all 3 of these at the same time. basically because when I made the plain version I decided to split it in half. And make two different flavors out of the 'mayo' Since I wasn't really a fan of the plain style. So I added basil and garlic. Cause everything needs garlic in my opinion! e v e r y t h i n g. Yeah don't get near my mouth ;O lol. So first things first- lets start with the base. After you make this. Split it in half if you'd like. Have fun with one half flavor wise, and then keep the other half as the regular mayo if you'd like. Vegan Mayo - 1 package of soft tofu 1 squirt of yellow mustard 3 tbsp lemon juice 1/3 cup unsweetened almond milk 1 tsp. salt 1 tsp. apple cider vinegar Basil Mayo: -About 1 cup of the mayo from above -1/2 cup fresh basil -1-2 cloves garlic ( I love garlic, so 2 for me) Blend until nice and mixed and creamy and store! Chipotle Mayo:
-The remaineder of the mayo (about 1 cup) -2 chipotle peppers (I used these chipotle peppers in adobo sauce I had read so much about, they sell them at whole foods. Blend until creamy and store! |
