Seriously guys, my only mistake was not doubling up on all of these ingredients so we could have more! So don't make my mistake ;)
Mediterranean Chicken Salad

1. Mix everything together in a bowl. Add in more Tzatziki depending on how you prefer your chicken salad. As you know, I always like a lot of sauce soooo I added 3 tbsp but start with 2 first to see how you prefer. Enjoy y’all!

-and as you can see I put these in lettuce cups topped with feta, but don’t stop there- this can be use in a sandwich, with pita crackers/regular crackers or served with some cucumbers and celery sticks. Whatever way you choose, it’s gonna be good!

So exciiiiiited to share this recipe with ya'll! I was so happy with how these turned out. The flavors were a dream! I must admit I get bored real quick eating just a protein with a vegetable, so I'm always trying to re-create well known recipes and make them healthy and low carb. So when it works- very exciting. I should also mention the way I shaped these at the end are definitely not authentic to a real wonton. But I was playing around with it and trying to figure out how to shape it, to make it work. So you go ahead and shape it whatever way you want! There are no rules in my kitchen! Just flavor and fun :)
Wontons in Spicy Garlic Chili Oil

1/2 cup almond flour
1/2 tsp baking soda
1 tsp salt
Pinch of garlic powder
2 tbsp. psyllium husk powder
1 tsp Xanthan gum
1 tbsp. olive oil
1 cup warm water
1/2 pound chicken
1 tbsp. tamari
4 tbsp. scallions (chopped)
1 tsp sesame oil
pinch of black pepper

2 garlic cloves (chopped)
1 tsp. olive oil
3 tbsp. chili oil
1 tbsp. golden monk fruit (Lakanto)
2 tbsp. tamari
1 tsp. Sesame Oil

These tofu lettuce cups were my lunch the other day. So flavorful, refreshing and gooooood... I decided I needed to share the recipe with you! If you try it let me know :) .
Tofu Lettuce Cups

1 package of extra firm tofu
1/2- 1 tsp corn starch or tapioca flour
4 tbsp. hoisin sauce
2 tbsp. tamari (or soy sauce)
1 tsp rice vinegar
1/4 tsp ginger powder
1/4 tsp garlic powder
1-2 tbsp. sriracha
4 tbsp. red onion (chopped)
2 green onions (chopped, for topping)
Black pepper (to taste)
Optional add in/topping:
bell peppers, cabbage, peanuts, sesame seeds, carrots
BUFFALO CHICKEN stuffed bell pepps!
yup. This happened yesterday... and it’s gonna happen again tonight for dinner. So freaking good. I made home made ranch (recipe below) the other day and was like.... what could I make with ranch besides a chicken salad.... Enter the buffalo chicken bell pepps.
I steamed chicken a few days ago and then shredded it, *my favorite way to cook chicken now. Tossed the chicken in @thenewprimal buffalo sauce. Baked the cut in half bell peppers by them selves for about 10 minutes at 450. Then placed chicken inside and baked for another 10 minutes. You can always broil for 5 more minutes to have nice crispy edges on the bell pepps, just pay attention everyone’s broil setting is different .
Once I plated them I added cilantro, the ranch, and some red onions. So flavorful and good. Here’s my super easy ranch recipe also :
3 tbsp avocado oil mayo
1/4 cup sour cream
2 tbsp @flavorgod ranch seasoning
1 tbsp dill
1 tsp lemon juice
1 tbsp water
pinch of: onion powder, black pepper, paprika, garlic powder
In a small bowl stir all of that together really well. And then it’s done! So easy. Store in a tight lid jar for up to 5 days. enjoy
