This morning I had high hopes for some yummy pumpkin pancakes. But indeed- it was an epic fail. I no I'm not the greatest at pancakes/waffles in general. BUT these were complete mush inside. I'll continue working on the recipe :( Until then- I had to make use of the pumpkin still- So I made oatmeal as I usually do every morning, this time with pumpkin. Let me tell you- pumpkin + almond butter go well together believe it or not :o
1/4 cup oats
1/2 cup unsweetened coconut almond milk (my favorite)
1 tbsp almond butter
