Ricotta Toast (Gluten Free, Vegan + Keto Options)

Look, let me be real with y'all.... I'm not always down to try 'trends' ahem, for instance: PASTA CHIPS... why you ask? Oh because it didn't work for me. Like not one bit. My jaw hurt after eating a few of the so called 'chips' I made... I wasted a box of gluten free pasta, and that makes me sad all day. Butttttttt what doesn't make me sad is the beauty of ricotta toast.

It's not a trend to me.... since it's been something I've been enjoying for quite some time... But if it means folks are now into it that weren't before, well good for them! Happy to know other people out there are giving it a try and realizing how amazing it is! Whether it's whipped, with fruit or honey, or in a savory way... it is delicious! Like very very good. Soooo that being said, here are some ways I have ricotta-d my toast over the years. By all means use vegan ricotta if your dairy free/vegan too! Whatever works for ya! Just enjoy ;)

Not sure if y’all know this or not but..... it’s FIG season babbbbby!

Celebrating with a lil’ toasty toast!  cause y’all know I love good ole fashion toast decorating! I also made these candied pistachios for the topping and I personally think it took it to the next level.

Y’all seriously gotta try this out! It was too easy and made me feel all fancy pants. Enjoy my friends!

details: @unbunfoods bread, ricotta, sliced figs, homemade pesto (recipe below), candied pistachios and an extra drizzle of honey.

#thedailykale Pesto:

Ingredients:


* 1 cup basil
* 1 cup spinach
* 2 tbsp. hemp seeds (or cashews)
* 1/2 cup pumpkin seeds (or almonds)
* Pink salt, to taste
* 1 tbsp. lemon juice
* black pepper to taste
* 1/4 cup water (or more, see notes)
* 2 cloves of garlic
* 1-2 tbsp olive oil (optional)

Instructions:
​

1. Blend everything together until smooth and creamy!
2. For the candied pistachios: I chopped (1 tbsp ) of them up and then placed in a small bowl with 1 tsp water and 1 tsp honey (you can sub agave).
3. Mixed around until coated, then put on a pan and cooked for about 2-3 minutes on a low heat until they became sticky and combined.

4.Set aside to cool. Before adding to your toast.

Raspberry Chia Jam (Vegan, Gluten Free, Keto Friendly)

Can’t express the deliciousness. The beautiful flavors of summer. And all in one toast!

Details: 1 piece of @unbunfoods (air fried for about 5 min at 380 flipping half way),
Peanut butter, and chia jam (recipe below).

#thedailykale pro tip: *air frying this bread (or any keto bread) is a game changer! My toaster sucks, it always burns certain parts of the bread- but the air fryer crisps it up evenly and doesn’t burn it! Just keep an eye on it*

Chia jams are so easy to make and so fun! Honestly, I say fun because you can go at it with berries and add ons, whatever way you see fit! I know chia jam is old news- I’ve been making it for years, but if you don’t know how to make it, I got you! I have many recipes/versions on my site- but here’s how I made this one!

Raspberry chia jam:
1/2 cup frozen raspberries
2 tbsp chia seeds
1 tsp lemon juice
1-2 tbsp golden monk fruit (or sweetener of choice)

In a small sauce pan, add the berries and let thaw on a low heat, stirring around a bit. Once they have softened, smash with a potato masher or even a fork. Add in chia seeds, lemon juice, sweetener and stir. Let sit for about 5 minutes until it comes together and is a jam consistency.

Whipped Ricotta is magic y’all! No joke. Just trustttt.

I made this a few months ago and if you follow my instagram stories, ya know my enthusiasm when I’ve mentioned how much in love I am with it quite a few times.

Soooo, Next time you go to the store, get yo self some ricotta! Can be vegan or non, that part is all up to you! Place the ricotta in the blender, add all the rest of the ingredients and watch it turn to silky smooth delicious-ness. Dude when I licked the spoon I was like HOLD UP. Whyyyyyyy have I never tried this before. So freaking good! I want this same taste bud happiness for you. So try it out- tag me if you make my recipe! Most importantly, enjoyyyyyy

Details for this toasty toast: whipped ricotta, @unbunfoods bread, sliced nectarines, basil and balsamic glaze.

Whipped Ricotta:
  • 1 container of ricotta
  • 3 tbsp fresh basil
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1-2 tbsp olive oil

Instructions:
  1. Blend everything together until its silky smooth!
  2. Spread on toast or even use it as a dip for veggies, crostini or crackers. You really can NOT go wrong with this!

Orange Creamsicle Toast 

When I was a kid, pretty much anything ‘orange + cream’ related was a good ole fashion favorite of mine. I loved the ice cream bars and especially the soda in the glass bottles we used to get when we’d go to an old general store (I’m originally from Georgia). So this toast basically brought my taste buds down memory lane, in the best way.

2 tbsp cream cheese (@kitehillfoods)
1 tbsp orange juice
1-2 tsp orang zest
1/2 tsp vanilla
1 1/2 tsp monkfruit
Bread of choice (I used @unbunfoods)


Stir everything together in a bowl until smooth. It sometimes helps to use a double boiler method to make the consistency even more creamy and smooth. Toast your favorite bread and spread it on there... Add extra orange slices and hemp seeds if you’d like ✨✌🏼 Enjoy! #thedailykale
