Sometimes you want pizza... well wait a minute- I always want pizza. How about you? :) But I do try to eat low carb most days of the week so making stuffed bell peppers for dinner has always been one of my favorites. It's warm and feeling and feels like a comfort meal but is actually pretty healthy- depending on what your definition of healthy is. I first made this version of stuffed bell peppers back in 2019, thankfully my photography skills have improved since then. Before reels/videos were all the rage. I am going back through all of my old recipes and revisiting them so I can take what I would consider at least, better photos. SO all that being said here these are again years later and looking even better than before! I will say when I filmed this I accidentally cut myself on the black olive container so I am just gonna say be careful with that thing! Sheesh that hurt. But these peppers were worth it! Just be careful ;) When you're craving pizza but trying to keep it low carb. These flavors come together so beautifully. What I love most about this dish is how you could really impress someone with this meal, having them think you spent soooo much time on it. When really, you didn't. But that's what this tastes like. So indulgent. It's a really special recipe that I came up with after I made my other version of creamy pesto rice. You can find the recipe for that here. This meal is perfect for spring. It's still comforting but has bright and fresh elements that make it such a good transition meal going into spring. Highly recommend giving this a try! I don't think you'll be disappointed. Also I have to say this is one of my favorite ways I make salmon! If anything- try salmon this way! It's soooo good. I love air frying it cause you can't beat the texture it gives it. I can't wait for y'all to try this dinner soon!
