Smoothie, in a bowl ?! Say wha!? Yeah. I know. Kinda strange. I have been seeing this happening and even I was skeptic. But... I decided to try it out. I didn't want a 'smoothie' persay, but I didn't want a heavy breakfast. And eating things with a utensil always makes me feel like I'm 'eating' something more so than drinking out of a straw. -To me anyway, I don't know about you . :)
Well here ya go. My very purple breakfast bowl. I have made an acai bowl before- which is very good too! Blueberry Banana Smoothie Bowl 1/2 Frozen Banana 1/2 cup blueberries 1 tbsp coconut 1 tbsp chia seeds - Add non dairy milk in, little by little Place ingredients in blender. Try to keep it as thick as possible. Then put in your favorite bowl, and top with whatever you'd like! I put oats & more coconut and chia seeds.

HAPPY VALENTINE'S DAY YA'LL!
So this is my last post and I'm out. Well until after the weekend I'm sure. This girls gotta work! I am so excited to share this very healthy and veryyyyyyy yummy dessert with you all. It's also, pretty quick. And even if you don't have exact nuts, you can get creative with what you have. By the way in case your wondering- I got these very cute sticks at Michaels Craft store. And they are straws, that I cut in half :) So if you need some last minute help- check there or target for these cute little striped straws and just cut in half and stick them in whatever dessert your making. Heres the recipe! Have a beautiful V*Day! You are LOVED! <3 3/4 cup almonds 1/8 cup cashews 1/8 cup pumpkin seeds 1 cup pitted dates 2 tbsp. raw cacao powder -Heavy Dash of cinnamon -1/2 tsp salt -1 tsp chia seeds Place all ingredients in food processor. Blend for about 30 secs. Add in 4 tbsp water. Blend again. -Once mixture starts turning into one big clump, your ready. You want is somewhat dry- but still mushed together. So when your rolling them in ball shapes, they stay that way! Adjust to your own liking. I rolled some in shredded coconut :) xo xo xo Is my title...a little on the corny side? Haha. I don't care, you!!
What I mean by my title is this pesto is suuuuuuuper fast & easy to make. And of course, as always, healthy. So fast actually- that I didn't even get to take a good picture. Haha. Oh well. Look how pretty & green it is. SO I've always made pesto the same way. And at first, after all my research earlier I told you about in a previous post on all the greens I need to avoid from now on. I thought :( How is this going to be good if no spinach & kale are allowed in on the pesto party? Oh well. It turned out great. Super creamy & delicious. Pumpkin Seed Pesto: Combine all ingredients in a food processor and blend babayyyy, blend! (Adjust all amounts to your own liking) - 1 Cup Basil - 1/2 Cup Pumpkin Seeds - 3 Cloves Garlic (I can go 4- I don't care how my breath smells ;) - 1-2 Tbsp Lemon Juice - 1/4 cup water ( add in slowly and check consistency before continuing to add it all in.) OMG OMG OMG. Okay there. I freaked out.
NOW thats over with. Hello, Raw ranch, I love you. Okay, ranch in general. Is my favorite thing. Back in my home town, when I was younger. I'd put ranch on anything I was eating. Well, maybe not ice cream. But basically everything else ;) You get what I'm saying. I LOVE it. (My inner southern girl). Anyway, so a lot of the vegan ranch recipes always have tofu in it :( And I'm avoiding all soy products from here on out- only because I have a thyroid problem. You do whats best for you. But anywho. Here is the amazing recipe I created this afternoon, based off the random ingredients I have in my kitchen. And I love for things to be green! :D Try this please! You'll be amazed at how much it seriously tasted like ranch. <3 Ya'll! In a food processor, combine all ingredients and blend. (You can always alter certain ingredients to your liking) -3/4 cup cashews -2 tsp dill -1 tbsp lemon juice (I added a 1/2 tsp more) -1 jalapeno -2 pinches off 'a bunch' of cilantro -1 clove garlic - 2 tsp. ACV - 1 tsp. coconut sugar (or agave, or any sweetener you want would work.) - 1 tsp. salt - 1 1/4 C unsweetened almond milk extras: a dash of - - black pepper - cayenne pepper ( I like it extra spicy!) - Green/ Red onion or powder ( I added just a tad of fresh green onion) Hi there.
So I've been having sort of a difficult week. Not anything extreme. Just a bit different than most. I've had to take my life and look at it as a whole, to see what isn't working. Sometimes we need to stop. Look around. Re evaluate everything. How we got here, etc. If everything is good- by all means, keep on doing what your doing. For me- unfortunately, I have had a problem with my thyroid for quite some time now. Somewhere around the age of 12, I think. Regardless. It's always been a known thing, I have hypothyroid. Basically a 'low' thyroid. Under active, etc. I'm nowhere near overweight or anything like that. However, being 27 years old, and thinking back to how I've felt over the past few years- hasn't been extremely energetic. I've made huge lifestyle changes in those years as well. I eat crazily better. Like crazy better. The tricky thing is, better can be bad in some cases. Now what I am saying here - is simply my own research, my own advice, my own problem. I'm not saying you have it- not saying you should try anything. This is just me ranting. I'm not a Doctor, so please if you have any questions, consult with a doctor first. K, now that we got that out of the way. I used to eat crap. Fast food- sodas, fake foods, etc. You get it. Then suddenly when I went to college, it finally hit me I needed to change. So I completely changed my diet. I ate salads? Salads? What is that?!! Haha. If it didn't have loads of ranch on it , I didn't know what a salad was! But I learned to eat them- without dressing, might I add! Anyway, as I evolved and learned more and more - I changed my bread to only ezekiel breads, it's a sprouted grain. I don't shop at any regular grocery store anymore. Meaning, I don't buy commercial products. I do still get essential things that they sell universally, etc. I'm just saying- the things in my fridge/kitchen, you can't find at a regular grocery store. Their usually only sold at specialty stores or health stores. Thats how much I've changed. Before- you would never catch me concerned about any of this! Now after all of this time- making sure I eat kale, spinach, green smoothies, things that are raw, etc. For my health, mind you. This just goes to show you the power of plants I guess. Not saying ANYTHING bad at all about them. Believe me- I love them :( Apparently if you have a thyroid issue (especially hypo-thyroid) there is a chemical in certain veggies, (cruciferous veggies) ie. cauliflower, kale, spinach, broccoli. And many many many more. This particular chemical, messes up and effects hypothyroid even more. You just don't understand how hard that is to hear :( I mean maybe you do, given the name of my website and all :'( At first, I wanted to find a way around this. Cause for me, without those vegetables, what do I eat? I literally eat those everyday. Everyday. And they mean so much to me. I thought that was being healthy was vegetables. Especially for me. A Vegan/Vegetarian/Pescetarian. Ahh whatever, I'm not titling myself anything! I just don't eat certain things! Ha. Anywho. What I'm very sad about is how I will have to dramatically change my diet. But at the same time, looking on the bright side- this will be fun. This is new. It's different. It's a change. And obviously it's going to be a change for the better- cause soon I will probably feel better than I thought possible! So the things I've researched for myself that I need to avoid are as followed. -Cruciferous Vegetables -Soy -Corn -Gluten As I've said before- the focus can't be on what you can't have. Even more so the focus has to be on the outcome. How much it really means to you. Your strength. I know I can do this. Cause I love myself and I do want this to not be a problem anymore. So if that means I have to stop eating my favorite veggies and keep them only at twice a week, then okay. There are a whole bunch of other veggies I can have. And I am not going on medication. SO. Therefore with diet/exercise we can reverse any health issues we have. And that is what I am going to do. So I wrote this post- mainly because I wanted to update you on me- I like sharing my life with you. If we all put ourselves out there- we give the chance of connecting with someone on their journey, and possibly helping one another. Thats why I titled this "No one is Alone" :). Also because when I think of the lyrics to that song, their very empowering. I feel good already, just thinking about how good I'll feel in a month, after changing my lifestyle, letting it sit in- and then reading this post and thinking wow, I feel so much better than I did when I wrote that! :) I'll leave you with some amazing lyrics from the song. But you should definitely look it up and listen to it! Can't wait til the movie comes out on christmas day this year ! "Mother cannot guide you. Now you're on your own. Only me beside you. Still, you're not alone. No one is alone. Truly. No one is alone. Sometimes people leave you. Halfway through the wood. Others may decieve you. You decide whats good. You decide alone. But no one is alone." "No one Is Alone" - Into The Woods |
