Air Fried Caprese Polenta Bites (Easy Summer Appetizer, Gluten Free + Vegan Option)
This is one of my favorite things to make and also one of my favorite things to eat! :)
It’s so easy to make and SO good. All ya need is these simple ingredients listed below and you have yourself a delicious little appetizer or snack! The amount of cheese and tomatoes you will need will depend on how much you’d like to add. So measure that with your heart. I hope y’all enjoy these and tag me @thedailykale if you make them!
*By the way!* If you are vegan you can totally enjoy these too! Just sub the fresh mozzarella for a vegan alternative- I have used the brand Miyoko's in the past and really enjoyed it! I am all about trying to share subs for different dietary needs :) Please tag me with all of your re-creations, I love to see them!

1. Blend everything in a food processor or high speed blender until completely smooth and combined.

Fiesta Polenta Bites ✨ I think if I had any other job... I’d be a chef for creating just party appetizers and desserts. It’s my favoriteeeeee thing to make. Cute little bite sized apps and sweets.
Fun fact* I also used to want to be a wedding/ party planner. Thanks J Lo. That was short lived though. Although I still think about how awesome that would be... Perfect job for me and my controlling Capricorn self. Lol.
Anywho. Y’all. This was so fun to make. Easy... and best of all- tastes real good! I puréed black beans in the food processor with spices like cumin, salt, black pepper, garlic powder, paprika and chipotle powder. I cut little small rounds of polenta and heated in the oven for about 10 minutes. Topped it with bean purée and put it back in oven for 5 min. Then added all the fun toppings. Tomatoes, red onion, cilantro, avocado, jalapeño and fresh queso or any cashew cheese you have.
Get as creative as you want! Just have fun :)
