When I saw Kena Peay use Queso Fresco instead of Feta in this very popular Baked Pasta dish... I had to try it out (cause I love queso fresco so much too) and add my own spin on it. So here y’all go!
I used low carb noodles by liviva foods so I had no normal ‘pasta water’ to add to this which ususually helps make this dish creamy. So instead I added heavy cream at the end because unlike feta, queso fresco never really melts into a creaminess, the heavy cream helped it do that more though :)
My cherry tomatoes were already on their very last day- (as you can see) but what do you do with cherry tomatoes about to go bad? Ya roast them. So it worked out perfectly.
I added diced green chiles, onions, green enchilada sauce by siete foods, purple cabbage and bell peppers. Topped with my favorite : cilantro Full recipe and directions below! Watch my how to video on instagram or tik tok : @Thedailykale #thedailykale

1 package of Queso Fresco ( I used Cacique)
Spices: Pinch of: paprika, chili powder, cumin, black pepper
2 tbsp avocado oil
1/8 tsp garlic powder
2 tbsp diced green chiles
4 tbsp green enchilada sauce
4-6 tbsp heavy cream
1/4 cup red onions (chopped)
1/2 bell pepper (sliced)
purple cabbage (sliced)
1 pint of cherry tomatoes
Cilantro (for garnish, optional)
2 pouches of Spaghetti by Liviva Pasta (drained and cooked)
Preheat oven to 350. Place cherry tomatoes in a baking dish, then add oil and stir around. Add in the spices and mix again. Add in onions, mix again. Add in chiles and enchilada sauce and stir. Make a space in the middle and place the queso fresco there. Bake for 35 minutes. While that is baking, sautee the bell peppers and cabbage lightly in a pan. Once it is finished baking add the cabbage/bell peppers and stir. Add in the heavy cream and stir around it will become very creamy. Add in your pasta noodles and serve right away with some chopped cilantro on top! Enjoy! Let me know if you make it :)
