Dinner plans this week: Birria Stuffed Sweet Potatoes ✨ it’s super comforting and delicious. Soooo much flavor in every bite. This Birria from Tj’s is extra helpful to have on hand when you want to make a quick, flavorful meal. But obviously If you’d prefer to use your own homemade Birria, that works too. Either way, I hope y’all give this a try and enjoy!
What you need: *Sweet Potato *Tj’s Birria *Shredded Cheese *Tomato *Onion *Avocado Crema /you can sub avocado *Cilantro How to ⤵️ -Wash first and then rub sweet potato with oil and add a little salt. -Poke some holes in the potato. Bake in the oven at 400 for 50-60 minutes. Once cool enough to handle, cut in half. -Cook Birria meat in a pan. -Place some of the Birria in the middle of potato and top with cheese. Add back to oven to melt cheese. -Once melted then add your other toppings. Add some hot sauce if you’d like also. Buffalo Chicken Stuffed Potatoes ✨
These went viral on IG months ago (for good reason) and I forgot to post on here, sorry bout that. I love stuffed potatoes cause they are so easy to make and so satisfying! Many more recipes coming, so stay tuned!
-Bake potato with oil and a little sprinkle of salt for 1 hour, at 400. -Once potatoes have cooled a little bit, enough to handle them without burning yourself, cut them in half. -Scoop potato filling out of potato, *carefully* and place in a bowl with chicken, spices, cheese and buffalo sauce. Mix together. Place the mixture evenly into the potatoes. -Place back in oven at 425 top with extra mozzarella 12-15 minutes or until cheese has melted. Can broil for the last couple of minutes if preferred. *Filling makes enough for about six crispy rice, depending on the amount you put on each one. Assemble your crispy rice by topping it with the chicken mixture and I added a drizzle of eel sauce on top, sesame seeds and jalapeño.
