I've been thinking a lot lately about how people have this idea that veganism is super hard and expensive. This irritates me. First off- cause thats just isn't true. However, I will say if you live in a certain area that doesn't have much going on in the grocery store with options, then I do get it. I don't think it'd be as easy to be vegan if I still lived back home in my small town. It was hard to find tofu at the grocery store when I last visited. BUT that being said, there is a grocery store about 30 minutes from there that does have everything. I understand you have to go out of your way to make things work- but thats just it. There is a way around everything. And no, it's not always the easy way. Ahem- any who. This is what I have been eating for lunch for the past few days. I don't get sick of it that much- since I LOVE it. :) But I do switch it up occasionally. Don't get me wrong. This bowl consists of very plain and simple things that are all cheap and easy to prepare and quick BY the way. THE DAILY KALE'S QUINOA LOVE BOWL
DIRECTIONS Toss all ingredients in a bowl and enjoy! So eassssssy! You must try it. It's so good. By the way this is before I added a bunch of Cholula sauce ;) I love that sauce! And I love spicy. You can add any veggies to this bowl, to make it the way you like best. Have fun with it! Buy all the veggies you can find at your grocery store and make it a point to use them all in everything you make. Thats why I love being vegan. I feel I have more fun with recipes cause I can be more creative. Not to mention the beautiful colors of natural living vibrant fruits and veggies. Have a great Friday!

Don't get mad at me ya'll! Go ahead and make this yourself ;) VEGAN MEXICAN FIESTA PIZZA For the amazing SIMPLE cornmeal crust:
DIRECTIONS
*Note* I do go crazy with the spices. By all means, use whichever ones you'd like. I like to go for a very flavorful crust : ) Now take it out of the oven and spread the bean puree on top. Sort of like your icing a cake :)
Make sure it's even spread on top. I made two pizzas, so I blended 1 can of cooked organic beans with no added salt. I also added spices into that while it was processing. Such as paprika, chipotle powder, a pinch of sea salt, cayenne, garlic powder and cumin. But you can add whatever you'd like. Next up you want to spread salsa on top of the bean spread. Then add your toppings. The toppings are totally up to you! But I added chopped onions, chopped bell peppers and jalapeños. Then put back in the oven for about 7-10 minutes. Until desired crispiness. I don't like mine to well done, so I did about 7 minutes. But some people like their crust extra crispy (Like my boyfriend). Once that is done now you want to add your final toppings, the ones you won't be cooking. I added chopped green onions, chopped cilantro, jalapeño cashew cheeze and avocado. I love this crust so much. I will probably never attempt a yeast crust again, cause this is way to simple & fast for all that time you wait for yeast to rise. No thank you. I absolutely love cornmeal crust & this hits the spot. Enjoy! So I realized that I have been hiding something from you and I'll hope you'll forgive me. I've been making home made guac for about six years now. I must say- back in the day, you couldn't get me to try a taste of guacamole if you tried. To me it was this green mushy stuff my mom liked a lot. And there was NO WAY. But man, I'm so thankful I live in California now and gave it a try again. Cause now, there isn't a day I go with out avocados. And if there is- believe me, it's probably not a good day. I put it on my toast sometimes for breakfast, or as a snack - or on top of whatever I made for lunch. It's a staple. ANYWHO. What is extremely gross to me though, is store bought guacamole. They put way to much lemon in it, because thats a way of preserving it and keeping it on the shelf. The also weird thing about it is, when I make home made guacamole, it only lasts for that day. There is no storing it over night- cause it'll turn a little darker, and get a weird, not so fresh taste. Again- reasoning behind store bought not tasting so great. But this recipe is super easy, and you can adjust the spicy-ness of it to your like ness! Thats the best! So sure, take a look at my recipe, but do less or more of something if you like things a certain way : ) Thats the fun in making something yourself. enjoy! <3 K I love Sunday mornings. I'm sitting here listening to peaceful music & listening to the wind come through the window and hit the blinds. This morning has been very nice. I don't always get to see the mornings, due to going to bed ridiculously late. (Not something I'm proud of :/) However, I did go to bed late last night. But ever since I got a camera this week, there has definitely been a pep in my step. It has made me realize that sometimes we go through life 'just because'. I have felt this way at times. Constantly confused as to what it is I'm meant to do here. I love art, as you know. All aspects of it. And now after getting a camera, I have a new found inspiration that has been calling me for a while. I'm very excited about this. It makes me happy to be so excited about something again. Sometimes we go through lulls, or dry spells if you will. Where there is just nothing. I tried to paint a few weeks ago, and nothing was coming to me. I just couldn't force it. It wasn't right. I always switch up my creative outlets. Sometimes I feel moved to sing, and make you tube video song covers. Sometimes I feel the urgency to act. And sometimes I don't. Just like I think sometimes we want to eat healthy, and sometimes we don't.
But after indulging basically all this week. I started to wonder, why is this? What is it that is making me want to participate in this lifestyle, and get stuck in it. I think sometimes were scared of success. Well, I mean I don't think it- I kinda know thats the case for myself. It's scary to think about making it. Even when we know thats what we want. So what is it that holds us back? What is it that I'm afraid of. I'm clearly only speaking to myself- not saying your like this. It's my own opinion. But I hear a lot of successful people talking about 'the good times', meaning when they were struggling. Those were hard times & learning times. But theres something kinda great about it too. I have a lot of drive & determination. Don't get me wrong. I continuously try and try. And yes, the rejection does get a little tiring and kinda sets me back sometimes. Instead of banging on the doors instead of knocking. I have started to believe & realize, that things truly do happen when their meant to. I am not ready to be successful. I think I have a few things to learn. Mainly about myself. I have a lot of confidence issues that I need to overcome. But I know that the classes & experiences I'm taking & creating, are all building me for success. I may not see it now, through the rejection of not booking certain jobs. But there is a reason. Cause when the right one comes along, it's gonna be awesome. I know it. I hope you know it too. I just recently got the cookbook, DeliciouslyElla. She is awesome. I actually met her, so I really do know. haha. Just kidding, you can totally tell on your own if you follow her on instagram/facebook etc. I love her outlook on life. I think it's so nice when you see someone doing exactly what their supposed to be doing. And had no idea that their life would be this way. What started out as not a good thing- she had a disease and decided to try a different lifestyle out, started eating healthy and started feeling better. Her positive outlook is inspiring. I've always loved following her food pictures on instagram, so glad she made a recipe book! - I've spoke before about this, but Gabby Bernstein is another one of those favorites. She is doing exactly what she is supposed to be doing. It's so enticing to watch. After all this talk about inspiration... I leave you with yummy photos of my recent recipe curried lentils. Hello & Happy Friday~
For some of you this means the weekend, whoo hop! For me, not so much. Haha. I'm a server, most of you know this. So my work schedule is basically opposite of the the normal. But it works for me so I am able to pursue my career in acting! Now anyway, need to focus on what this post is really about. And thats about the challenge I'm launching for all of you & myself. Sometimes we find ourselves in a rut, and feel like something needs to change. At least for me thats currently how I feel, and I think it always goes back to nutrition and exercise. Which there has kinda been a big lack there of in both departments for me, not gonna lie. I always keep it 'healthy'. But Not really in the tip top shape I'd like to be in. I would love to invite you to join me in my green eating adventure. #TheDailyKale challenge does not mean you have to eat kale everyday. Although I don't find that a problem ;) haha. I just feel like sometimes I don't get enough veggies in. If your still hungry after eating a meal, and realize you didn't really have any veggies or clean food, then thats probably why your still hungry and not satisfied, or not feeling that great. I feel awesome when I eat my quinoa bowls. It's pretty much a great balanced meal. And having green smoothies, and my cacao truffles. All of that yummy clean food. You can't feel bad about it, because it's not bad. So I would LOVE FOR YOU to join me in my attempt of becoming even greener. I will give you an example of what you could possibly eat in a day. I understand some of you are not vegan, and thats fine, so whatever I write, just opt for your particular (hopefully organic and clean) protein of choice instead. And on instagram if you post a photo of your beautiful clean meal & or of you & your favorite veggie, please #thedailykale so I can see it :) *In addition to this green clean eating , I am upping my exercise also. I think we all have different goals & like to do different things for workout. And thats awesome. I do like to write down my workout plan for the week and check it off like a to do list once I've completed it. I feel really happy when I wrote a goal down and get to check it off. It could be just as simple as writing down: Tuesday, walk 3 miles. And then checking it off after :) You should try it. Get outside or in the gym, do something fun, just get out there and be active.
