Engine 2 Challenge that is. I have decided to join in on the challenge (Yahhooooo!) That started on Feb 3rd all around the world. Awesome! I'm late, yes thats obvious- However it's okay! So if your interested, come on and join in! I took this challenge in January of 2012, and it set me up for an awesome year. So I'm looking forward to this again. You learn a lot. Vegetables become your focus. And feeling good becomes your everyday mood. So lets do this. This is a meal I made yesterday- Basically engine 2 approved- but yesterday, I wasn't on the 'challenge' yet. Still was a great meal. Just a tad bit too much cashew cheeze ;) Will go lighter in these next 28 days!

And in addition to the Engine 2 Challenge.
I'm going to go light on 'processed' carbs. Like bread, pasta, etc. I only eat the healthy ones, believe me. But I just feel like an extra challenge. Changing my focus to VEGGIES. And color. And freshness. And feelin good! Ya got me!
SO here ya go. This bowl was yum. Black beans, boiled sweet potato, cashew cheeze (recipe courtesy of me :), red cabbage, & KALE of course :)
