Not quite done with all the holiday desserts!
I really loved how these turned out. I’m very familiar with the OG Girl Scout cookies - so I wanted to make them with a holiday twist of course. And since I’m having a moment with all things gingerbread...I went that route!
Not feeling like cookies ? You could make just the gingerbread peanut butter part cause it is just sooooo good. Oh and just wanna mention this recipe is totally sugar free and low carb, if you’re into that sort of thing. If you are not you can also replace the SF maple syrup for regular and the golden monkfruit for coconut sugar. The brands I tagged below are the ones I love and recommend, but use what you have. Gingerbread Peanut butter Patties
Recipe by The Daily Kale
1 1/2 cup almond flour
1 scoop @foursigmatic protein powder
2 tbsp maple syrup
4 tbsp coconut oil
2 tbsp @Lakanto golden monkfruit
1 tsp ginger
1/2 tsp cinnamon
1/2 tsp cloves
1/2 tsp nutmeg
Pinch of salt
2-3 tbsp almond milk*
Bake cookies at 350 for 15 min
Cool completely. Spread gingerbread peanut butter on top- then freeze for 30m-1 hour and then dip them in chocolate. Place back on lined parchment paper pan and freeze for another 15 minutes to set. Store in fridge.

Gingerbread peanut butter:
7 tbsp peanut butter
3 tbsp maple syrup @choczero (use discount code 'thedailykale' on their website)
1 tbsp coconut oil (melted)
1 tbsp @Lakanto golden monkfruit
1/8 tsp cinnamon , nutmeg, ginger
pinch of cloves
2 tbsp almond milk*
Mix everything together in a bowl until it’s completely smooth and combined. Add the almond milk in slowly- 1 tbsp at a time, only if the mixture is too dry.
1 cup chocolate chips @lilys_sweets
1 tbsp coconut oil
5-6 tbsp coconut milk (can)*
Using a double boiler method, melt together and stir until smooth and silky!*
