Not quite done with all the holiday desserts!
I really loved how these turned out. I’m very familiar with the OG Girl Scout cookies - so I wanted to make them with a holiday twist of course. And since I’m having a moment with all things gingerbread...I went that route!
Not feeling like cookies ? You could make just the gingerbread peanut butter part cause it is just sooooo good. Oh and just wanna mention this recipe is totally sugar free and low carb, if you’re into that sort of thing. If you are not you can also replace the SF maple syrup for regular and the golden monkfruit for coconut sugar. The brands I tagged below are the ones I love and recommend, but use what you have. Regardless! I hope you’ll try these out and tag me on instagram if you do!
