Ok ya'll. So depending on what part of the world you live in- this can either be easy to find, or not so much. But if you can- try. Any asian or indian market around you, or possibly even a whole foods/natural store. This is a vegetarians dream. Well for me, my dream, because it is seriously- so much like 'pulled pork'. Craziness! The texture I mean. Not the taste.
And I just recently chatted with someone who is actually from India. I found out jack fruit is just taken off trees there and cut open and ate fresh. Never cooked. Thats just us typical americans I suppose. Cooking things that should be fresh. Haha. But I'm okay with it! And she was too! She likes it either way- just finds it a bit strange. Which I totally get. But among the millions of things you can do with jackfruit- and I will, believe me. I chose to make vegan enchildas. Unfortunately, my enchilada pictures were deleted :'( But the one pic left of just the jackfruit is enough to show you what I mean! What I did was, I took two cans of fruit. Drained/rinsed. Then cooked in spices. I decided to make this a mexican dish, so I put mexican spices. Chilis, and a small can of tomato sauce ( no sugar). -Cumin -Chili flakes -Small can of green chilis -Black Pepper -2 Garlic cloves (minced) -1/4 red onion (chopped) Cook jack fruit with all ingredients above for about 5 minutes. I then placed the filling inside corn tortillas as you would do for enchiladas, and put them in a big baking pan. I topped with enchilada sauce and baked for 10-15 minutes. Topped with cilantro and vegan cashew cheeze. ENJOY!!!!!
