Hey ya'll! I know it's been a while since I've posted. I honestly haven't been making anything 'special' in the kitchen lately. Thats why I realized today, that maybe even more important than a new recipe- is sharing the DAILY meals I usually have. Like clockwork I tell ya. Sometimes I don't feel like this. But lately this has been working for me best. And I haven't gotten sick of it. So until I add some other dishes in the rotation- this has been what I've been typically having everyday. For breakfast I have been loving unsweetened coconut yogurt with fresh berries and my homemade granola that I made a big batch of last week. See, nothing has been going to waste! :) For lunch I always make a 'fiesta quinoa love bowl'- and or brown rice. Which ever one we have. Thats basically just black beans, cilantro, cashew cheese, kale, rice or quinoa, tomatoes, red cabbage and red onion. And for dinner, I've been have quinoa with homemade pesto & salad mix. You guys. It is so much easier to prep everything on one day when you have time, so that the rest of the week you can just reach into the fridge and have it ready to go.
I'll be honest with you- Besides the usual avocado or peanut butter toast- I used to eat something random for lunch & dinner. And threw a lot of stuff away. So I've been making it a point to not let this happen anymore. I buy veggies at the beginning of the week & write it on our chalkboard so that we know we need to use those and make something involving that. I also have a list of everything I need to prep. I prep cashew cheeze, homemade pesto, black bean & quinoa burgers, brown rice, quinoa, chop my kale, chop the red cabbage and make protein truffles. If you do this at the beginning of the week- you set yourself up for so much success! I'm about to have an epic Meal Prep Monday in a sec. I've always loved planning things and having things in order. I think it really helps your mind. It will also help your pocket! All the things I buy are so inexpensive- and organic. And get used.
