I'll be honest with you- Besides the usual avocado or peanut butter toast- I used to eat something random for lunch & dinner. And threw a lot of stuff away. So I've been making it a point to not let this happen anymore. I buy veggies at the beginning of the week & write it on our chalkboard so that we know we need to use those and make something involving that.
I also have a list of everything I need to prep. I prep cashew cheeze, homemade pesto, black bean & quinoa burgers, brown rice, quinoa, chop my kale, chop the red cabbage and make protein truffles. If you do this at the beginning of the week- you set yourself up for so much success! I'm about to have an epic Meal Prep Monday in a sec. I've always loved planning things and having things in order. I think it really helps your mind. It will also help your pocket! All the things I buy are so inexpensive- and organic. And get used.
