For the filling:
1 cup of spinach (juiced- for color)
1 cup cashews
1 cup dates
10-15 mint fresh mint leaves
For the outer cookies:
1 cup almonds
1 cup pitted dates
1 tsp raw cacao powder
First juice spinach, then blend spinach juice and mint together first, in a food proccessor. Add in cashews and dates after. Place in seperate bowl.
Now blend your outer cookie part. Roll in a ball in your hand, then smash into a circle :)
Place filling on the outer cookie, top with another outer cookie, and smash together.
Freeze for about an hour to hold the mixture.
