It’s a good day to have a goooooood day. And it’s a good day to to make (and eat) some Samosa Pinwheels.
I’ve said it before and I’ll say it again: I love the flavors of Indian food. If y’all haven’t tried that cuisine yet- quit sleeping on it! Give it a go :) It’s one of the best!
If you’re new to these flavors I hope you’ll give my recipe a try- it’s pretty simple and for the most part ingredients that are easy to find!
You can swap out the yogurt for any yogurt you prefer. And change the sweet potato to regular potato if you prefer. You can buy store bought tamarind sauce as well, I just make my own to reduce the amount of sugar that’s normally in it.
*As with all my recipes I tag brands I use because they are my own personal preference, but please use what you have :)*
You will need:
1 burrito sized tortilla (@sietefoods )
1 sweet potato (peeled + boiled)
1/4 cup green peas
1/4 tsp cumin
1/4 tsp ginger powder
1/4 tsp garlic powder
1/4 tsp coriander
1/2 tsp garam masala
Pinch of chili powder (optional)
Pinch of salt
1/4 jalapeño (chopped / optional)
3 tbsp chopped onions
1/4 cup kale (chopped)
In a pan sauté onions and jalapeño with a little oil. Then add in spices and stir. Add in peas, kale, mashed sweet potatoes and mix together over low heat.
On low heat warm tortilla until it’s pliable.
Place filling ingredients evenly into tortilla and roll it up.
Cut into 8 pieces. Air fry at 350 for 10-15 minutes. Keeping an eye on it so it doesn’t burn.
Mint chutney : almond milk yogurt, jalapeño, golden monkfruit, cilantro, mint, lime juice + spices.
