It was one random night in December... we were out of chocolate. I usually always have dark chocolate bars in the house (Chocolove 77 percent is my favorite). But, we were out. Yep. So it was either- have no chocolate. OR DO SOMETHING. ...And I did something. And since then- things have never been the same. I now do not rely on having chocolate bars in the house- when it's this easy & this good to make your own. 3 ingredients for the base of this recipe: Cacao powder Coconut oil Chocolate chips Agave or sweetener of choice *Obviously I add the other fun stuff, nuts & seeds, etc- but the base of this is the most important part- because, duh. ENJOY!* NUT CHEESE is taking over the world! So awesome. Look here- I love cheese. But cheese don't love me. Probably doesn't love you either. Not trying to be rude- just sayin'. Any who- I've been making cashew cheeze for a long ass time. It's been a staple in my fridge since I tried it for the first time at Cafe Gratitude maybe 7 years ago. Just before I went *pescatarian*. I fell in love. You have to try it to know what I mean. I remember being completely mesmerized by it after I tried it. Vegan food wasn't super popular then. So this cashew cheeze thing sounded CRAZY to me. But I had to try it. And like I said. Fell IN LOVE. Mine doesn't taste like Cafe Gratitude's. And I'm cool with that. Cause I like inventing my own flavors. And it really is super easy. Like if you have a food processor= you can make it. Put it on everything. Go right ahead- it'll probably taste good with it. Please try it & let me know how much you love it :) * This is not a melty cheese, just fyi- this is more of a sauce. It does work on pizza however. ——- I adjust the cheese based on what I’m making it for. I have 3 different versions I like to make with this base, depending on what I'll be pairing it with. But I do love it as is also. It's great on everything!
Add everything into the food processor & blend until it’s a creamy sauce. Add in more salt, lemon juice and or water for desired taste/consistency. (Add in water little by little & scrape down sides). Keep blending for a few minutes for an extra smooth, creamy sauce texture. Drizzle on pizza. Or use it as a dip for roasted sweet potato fries. Crema on tacos. Pasta sauce. Salad dressing. Stuffed mushrooms. Zucchini boats. Casseroles. I literally use it on everything. *I do not soak my cashews most of the time. But yes, you can. ENJOY! I love me some AVOCADO TOAST. Who doesn't? I mean, I'm sure your out there. If you are- you're probably not reading this post. As this probably wouldn't interest you much. Lol. So like I said, I love it. And I make a different version of it quite a bit- trying to change things up. BUT! I love it these 3 ways- the most for sure. The Sauerkraut Avo ToastSo here we have two different times I've remembered to take a photo of this. Cause sometimes- I ain't got time to take no photo! I'll take a bite and then remember. And then it's just ohhhh well, next time. But the first photo is on ezekiel bread & the second is a gluten free sourdough baguette. As much as I'm trying to find the best gluten free bread- I'm just not finding it right now. So I'm sticking with my ezekiel bread. I'm hoping to create a gluten free bread for ya'll. Thats the goal. So hopefully soon I'll be sharing one with you. BUT ANYWAY. Back to this. SO for this one you'll need:
*I know sauerkraut isn't for everyone. So maybe skip this if it's not. But if it's your thing, I hope you love this version! I sure do. The BLT Avo ToastOkay! SO this version is super flavorful. I love it. It's very filling as well. If you want a more hearty breakfast- you can always do 2 pieces of bread. I usually am good with just the one. But by all means make more if you want more! So for this version you'll need:
I toast my bread. Then I spread the hummus on the base. I also add avocado next. (I also add avocado next, not as pictured- realized it was much easier to eat this way after this photo, but whatever way you'd like to set it up will do.) Add on your lettuce & tomatoes, sprinkle with coconut bacon & cashew cheeze. Enjoy! The Caprese Avo ToastThis is definitely fancy avocado toast right here. It's not your average quick avo toast.
But hey, if you're feeling fancy. This ones for you. I love it. But then again- I love caprese. I love the flavors in this. I even added garlic hummus on the base for extra protein. For this particular version you'll need:
So for this, I added on hummus & avocado as the base. I topped it with the tomato & arugula- then drizzled with the balsamic glaze & cashew cheeze. So good! *Balsamic glaze : super easy. Just need to heat balsamic vinegar in a sauce pan for a few minutes on a low simmer until it gets less watery. Keep an eye on it as it burns very quickly and easily. |
